How you use olive oil should be based on whether it is refined or unrefined. The refined olive oil can contain heat and still maintain its bonds to perform its functions. Hence refined olive oils are best for grilling, frying and cooking. The unrefined olive oil (Extra Virgin olive oil) on the other hand is not meant for cooking due to the nature of the bonds. When high heat is applied to extra virgin olive oil, the bonds break down and this affect its health benefits. Hence extra virgin olive oil is best used in its raw form such as sprinkling it on some salad, rice, bread or adding it to smoothies.
